  • 14 cup (55 grams) Uncrystallized Ginger, Roughly Chopped
  • 14 cups (35 grams) dried, coarsely chopped cranberries
  • 14 cup (40 grams) dried currants, roughly chopped
  • 14 cup (40g) Sultanas, Roughly Chop
  • Lightly Toasted, Chopped Pistachios, 14 Cup (35g)
  • 14 cup (40g), blanched, toasted, and chopped almonds
  • Meringue with dark brown sugar
  • Three Coles Extra-Large Free-Range Australian Egg Whites
  • 12 cup (110g) brown sugar
  • Glazed Cherries
  • 500g Cherries, Pitted and Halved
  • 55 grams of Granulated Sugar
  • 1 mL of Lemon Juice

Step 1

Line the sides of an 8-cup (2-liter) pudding basin with plastic wrap, allowing the sides to overhang.

Step 2

Step 3

Using a large spoon and working quickly, dollop and spread the meringue over the pudding to cover it decoratively. Freeze for at least 1 Hour and as Long as 1 Day.

Torch meringue with a kitchen blowtorch until golden brown on all sides. Freeze for thirty minutes.
